Un\u2019ex officina di\u00a0<\/span><\/span><\/span>120 mq<\/span><\/span><\/span><\/strong>\u00a0che, grazie anche a opere di\u00a0<\/span><\/span><\/span>street art<\/span><\/span><\/span><\/strong>, conserva il carattere post industriale seppure ingentilito dalla presenza di pareti di legno e piante.<\/span><\/span><\/span><\/p>\n

Circa\u00a0<\/span><\/span><\/span>50 i coperti<\/span><\/span><\/span><\/strong>\u00a0tra tavoli, sedute alte, bancone e tavolo sociale. Per la bella stagione \u00e8 previsto l\u2019ampliamento dei posti a disposizione con un dehors esterno.<\/span><\/span><\/span><\/p>\n

La cucina di Santo \u00e8 affidata all\u2019estro e alla tecnica dello chef\u00a0<\/span><\/span><\/span>Edoardo Meuti<\/span><\/span><\/span><\/strong>, 33 anni, con precedenti lavorativi al Rossini dell\u2019Hotel Quirinale e al ristorante Quinzi & Gabrielli.<\/span><\/span><\/span><\/p>\n

Ilaria Sbal<\/span><\/span><\/span><\/strong>\u00a0\u00e8 la bartender che vanta esperienza internazionale al fianco di grandi chef ed \u00e8 esperta di abbinamento tra cocktail e cibo.<\/span><\/span><\/span><\/p>\n

Responsabile di sala \u00e8\u00a0<\/span><\/span><\/span>Luca Gallo<\/span><\/span><\/span><\/strong>\u00a0che, dopo anni nell\u2019h\u00f4tellerie di lusso, ha scelto di misurarsi con una nuova sfida.<\/span><\/span><\/span><\/p>\n

L\u2019offerta<\/span><\/span><\/span><\/strong><\/p>\n

Santo Trastevere<\/span><\/span><\/span><\/strong>\u00a0accoglie i suoi ospiti dall\u2019aperitivo al dopo cena. La serata inizia con i \u201ccicchetti\u201d abbinati ai drink, a cena il men\u00f9 \u00e8 alla carta; da maggio apertura domenicale per il brunch.<\/span><\/span><\/span><\/p>\n

Alla base dei piatti solo ingredienti freschi e di qualit\u00e0 garantita, selezionati con cura presso fornitori di fiducia: dal pane del forno Roscioli ai pregiati prodotti Selecta.<\/span><\/span><\/span><\/p>\n

Food<\/span><\/span><\/span><\/strong><\/p>\n

Il men\u00f9 soddisfa i gusti di tutti, alternando proposte di carne, pesce e vegetariane, tra rivisitazioni della tradizione e accostamenti dal sapore internazionale.<\/span><\/span><\/span><\/p>\n

Alcuni esempi: tra gli antipasti il\u00a0<\/span><\/span><\/span>Calamaro Asiatico<\/span><\/span><\/span><\/strong>\u00a0(calamaro saltato, crackers di riso soffiato, salsa di edamame, gelatina di cipolla rossa al pepe, salsa teriyaki); la\u00a0<\/span><\/span><\/span>Battuta di gambero rosso di Mazara<\/span><\/span><\/span><\/strong>\u00a0(con robiola al basilico, sale agli agrumi e croccante di pane).<\/span><\/span><\/span><\/p>\n

La pasta ripiena di polpo su crema di topinambur \u00e8 una delle novit\u00e0 pi\u00f9 interessanti di questa stagione.<\/span><\/span><\/span><\/p>\n

Molto gustoso \u201c<\/span><\/span><\/span>L\u2019Agnello di Dio<\/span><\/span><\/span><\/strong>\u201d: Costolette d\u2019agnello New Zealand marinato 48h (soia, tosatzu, worchester, senape e aneto) bietola rossa e salsa BBQ home made.<\/span><\/span><\/span><\/p>\n

Altrettanto invitante \u201c<\/span><\/span><\/span>Ops! Si \u00e8 bruciato il polpo<\/span><\/span><\/span><\/strong>\u201d (Polpo arrostito, vellutata di porri e curry, scorzonera croccante e cavolfiore viola)<\/span><\/span><\/span><\/p>\n

Oltre ai grandi classici, da Santo \u00e8 possibile degustare\u00a0<\/span><\/span><\/span>drink originali<\/span><\/span><\/span><\/strong>\u00a0realizzati con distillati e prodotti di alta qualit\u00e0 da\u00a0<\/span><\/span><\/span>Ilaria Sbal,<\/span><\/span><\/span><\/strong>\u00a0a lei affidato il compito anche di suggerire i migliori accostamenti con le portate del men\u00f9.<\/span><\/span><\/span><\/p>\n

Eternal City Brewing<\/span><\/span><\/span><\/strong>\u00a0firma invece la\u00a0<\/span><\/span><\/span>proposta birraria<\/span><\/span><\/span><\/strong>\u00a0del Santo. Birrificio artigianale nato nel 2013, dalla spiccata identit\u00e0 romana, realizza birre rigorosamente non pastorizzate e non microfiltrate. La variet\u00e0 di stili prodotti rende possibile l\u2019abbinamento sia con i piatti semplici che con quelli ben strutturati.<\/span><\/span><\/span><\/p>\n

Dalla collaborazione con Eternal City Brewing \u00e8 nata anche una birra esclusiva con etichetta \u201cSanto Trastevere\u201d, una American Pale Ale, fresca e beverina.<\/span><\/span><\/span><\/p>\n

Non manca una ristretta ma ben ragionata proposta di vini, curata dallo staff con il coinvolgimento di affidabili fornitori e produttori.<\/span><\/span><\/span><\/p>\n

Una\u00a0<\/span><\/span><\/span>curata playlist internazionale<\/span><\/span><\/span><\/strong>\u00a0\u00e8 il sottofondo di tutte le serate, mentre ogni mercoled\u00ec l\u2019appuntamento \u00e8 con la musica dal vivo: jazz, soul, rock…con band emergenti che eseguono sia cover che brani originali.<\/span><\/span><\/span><\/p>\n
